west of Ravenna on Grey Road 2, awaits an unsuspecting and
delightful viniculture experience. Georgian Hills Vineyards is now offering
“Perfect Pairings”, an informal wine tasting experience that caters to those
who have a passion for wine, and wish to learn the basic fundamentals of
wine tasting, food pairing and cool climate grape varieties. Our local vine-
yard is rewriting the book on Ontario wines and their recent successes at
the 2012OntarioWine Awards (at which theMarechal Foch won the silver
medal) proves that not all of Ontario’s best grapes are grown in Niagara.
Hosted on Georgian Hills Vineyards’ quaint patio overlooking the vine-
yard and the surrounding hills, co-owner Robert Ketchin or one of his in-
credibly knowledgeable staff will conduct the practicum and share their
familiarity about the local grape varieties and how climate and geography
affects the soil and harvest. You will learn the fundamentals of tasting wine,
and what to look for in a quality wine as well as the ultimate wine and food
pairings to compliment. The Perfect Pairings experience provides a tasting
flight of 5 very different wines paired with local trout, cheeses, apples and
paté. Wine tasting selections include Vidal Blanc, Seyval Blanc, Gamay
Rosé, Cuvee Cuesta the Ida Red Frozen to the Core desert wine.
