Kale -
One cannot discuss
superfoods without
‘dishing’ about the goodness of greens, and kale is the jolly green
giant of all things leafy and green. If you don’t think greens are
sexy, or if the sight of kale gives you the creeps, consider the fact
that its phytonutrients prevent several forms of cancer including
breast, ovarian, prostate and liver cancer. Like other Brassica veggies
(think broccoli, brussel sprouts and cabbage) kale contains indole-3-
carbinol or I3C. This compound helps the body detoxify harmful estro-
gen metabolites, meaning that it further reduces your risk of breast
cancer. On top of all this, Kale contains vitamin K and calcium which
prevent postmenopausal bone loss and fractures.
If you don’t like kale then you’ve never had kale chips and you
need to try some immediately! Next, replace plain old lettuce with kale
and take your salad from plain Jane to goddess worthy. Never over-
cook your kale – raw is really best as it preserves the nutrients and
flavour – but feel free to ease into kale by warming it just briefly. For
example, add chopped kale leaves to a bowl of hot quinoa. You don’t
need to cook it, simply stir it in until the leaves soften slightly. Then add
garlic, chickpeas, lemon juice, olive oil and sea salt and you’ve got a
seriously sexy bowl of goodness. Not scared? Go for
